Chhole Samosa Chat in Tribhuvan University Canteen

The charm of Tihar has come to end and classes in Tribhuvan University have  began and when a foodie like me roam around the area ,the canteen area full of youth makes you feel  happy.The most interesting dish in canteen is Samosa chat with chole,I love the taste when the thin girl prepares so fast.I love samosas. I love chaat. I love samosa chaat. Chaats are savory  snacks, which means “to lick.” They are served pretty much at all roadside dhabas in . The taste of this dish seems like it should be a sin. Chole is topped with samosas, which are often times chopped up. The chole and samosas are then topped with tomatoes, onions, cilantro, yogurt, red chutney, green chutney, and fine sev. Believe me when I say that this is one of the tastiest things you will ever put in your mouth.I have been an observer of her routine work and note down the recipe.



Ingredients
  • Samosa – 4 nos
  • Dahi -1 ½ cup
  • Sugar – 3 tbsp
  • Rose water – 1 tsp
  • Sweet tamarind chutney – 4tbsp
  • Green chutney – 2 tbsp
  • Chopped coriander leaves -garnish
  • Chat masala – 1tsp

For Choley/matar
  • Oil – 2½ tbsp.
  • Bay leaf – 2
  • Black cardamom – 4 to 5
  • Ajwain (Carom seeds) – ½ tsp
  • Onion chopped – 1 cup
  • Tomato – 4
  • Ginger garlic paste – 2 tbsp
  • Red chilli powder – 1½ tsp
  • Choley masala – 2½ tbsp.
  • Coriander powder – 2 tbsp
  • Turmeric powder – ¾ tsp
  • Salt – to taste
  • Dry mango powder – 1 tsp
  • Chickpeas (soaked and boiled) – 3 cup
  • Fresh coriander chopped-2 tbsp

Method
  1. Heat oil in a pan add in the bay leaf , black cardamom, ajwain and sauté  Add onion chopped and sauté till golden brown. Roughly chop the tomatoes and puree it and keep aside.
  2. Add ginger garlic paste and sauté for half mint.
  3. Add in the. Add in the tomato puree and cook the mixture for 5-6 mint.
  4. Add in red chilli powder, choley masala, coriander powder, turmeric powder, salt, dry mango powder and stir well. Cover with the lid and cook it for 2-3 mints until the oil ozes out.
  5. Add in the boiled chickpea with its stock and stir well. Add water Cook it on a medium flame 6-8 mints.
  6. Remove from the flame and keep aside.
  7. Mean while micro wave the samosa for 2 mint and then bake it in an preheated oven at 200 degree for20-25mints
  8. Now place two samosa into a serving plate and crushed them. Then pour the chilled Dahi, sweet chutney, green chutney on top of it.
  9. Sprinkle some chaat masala and garnish with nylon sev and chopped coriander
